I thoroughly enjoyed my "AI for Everyone" course in Coursera. It is such an ardent platform to upgrade your knowledge on various topics that offers you so much to grasp.

It was a decent opening to the concept of AI and how to go about "thinking about AI". At times it seems a bit too basic, but for non-tech people, that might be suitable
